Broccoli Cheddar Soup
Ingredients
- 3 cups low sodium chicken broth
- 3 med broccoli crowns (chopped)
- 1/2 a medium onion (diced)
- 1/2 cup cheddar cheese
- 3 cups heavy cream
- fresh cooked bacon bits
- chopped green onions
- 1 tsp salt
- pepper to taste
- garlic powder to taste
Directions
- Combine all ingredients (except for the cream) and bring to a low boil. Turn down heat, cover, and let simmer for 15 min or until the broccoli chunks are soft.
- Dump everything into a blender and puree.
- Return to the pot, stir in the heavy cream and bring it back up to a low boil. Season to taste with salt, pepper and garlic powder.
- Simmer for an additional 10 minutes or so. Once the cream goes in it'll be moderately thick so you will have to stir it well.
- Serve with more cheddar cheese, bacon bits and some green onions.

What is the serving size?
I looked on MFP and the recipe is there - 1 cup is one serving, nutritional information is embedded.
the calories from 1 serving of soup containing 1/2 cup of heavy cream adds up to 800 calories alone. This recipe does not make sense
This is not correct! I just made it and realised that its at least 7 carbs per serve.
I made a slightly different version of this 2 carbs per serving
1 cup College Inn chicken broth 0 carbs
1/2 cup fresh Broccoli 2 carbs
1 T Cheddar 0 carbs
1 T Whipping Cream 0 carbs
bacon 0 carbs.
I blended the broth and the brocc, simmered it in a sauce-pan, poured it into my bowl, sprinkled the cheese, mixed in the cream, and sprinkled the bacon and a pinch on black pepper. Yum! I could have even added some butter for flavor but didn't.
